On Sunday, Daddy didn't bring us out and Sissy had her plans, so Mummy was telling me she wanted to try baking whoopee pies someday. Since I was too restless to do anything else and the recipe book which she borrowed from the library is due this coming Tuesday, I decided to try baking the Classic Whoopie Pie - Chocolate Cakes + Marshmallow Filling!

Did the marshmallow filling from scratch. Either our electric mixer is damn lousy or we shouldn't use maple syrup in place of the light corn syrup (which we didn't have at home), the marshmallow filling was supposed to thicken by mixing on high for about 5 minutes but I spent probably about an hour mixing lo please! The mixer was at speed 3 already somemore. The mixer was hot until.... But I persisted. Until the marshmallow filling got slightly thicker.
